Highland Park Quercus is the third release in the distillery's acclaimed Keystone Series, a five-part collection celebrating the essential elements behind Highland Park's distinctive character. Named after the Quercus species of European oak used to craft its sherry casks, this limited edition highlights the vital role that oak plays in whisky maturation. Released in 2017, it was matured exclusively in first-fill sherry-seasoned European oak casks and bottled at 48.3% ABV, with an outturn of just 1,200 bottles.
The carefully crafted casks begin their journey in Jerez, Spain, where they are seasoned with Oloroso sherry for around two years before travelling to Orkney to mature Highland Park's spirit. This meticulous process imparts remarkable depth and complexity, delivering rich notes of fruitcake, dried fruits, warming spice, and dark chocolate, balanced by the distillery's signature aromatic peat smoke and natural dark golden colour.
Created to honour one of Highland Park's five production keystones, Quercus is a superb collector's release that beautifully demonstrates the profound influence of exceptional sherry oak on the distillery's distinctive island style.
