In ‘Fallow Edition’ (Second Crop), a combination of Oloroso and Pedro Ximenez Sherry casks to create a beautifully rich, autumnal dram that has a very different flavour profile to ‘Fallow Edition’ (First Crop). The Oloroso butts give rich notes of manuka honey and golden syrup, whilst the introduction of the PX casks provides warming layers of sweetly spiced ginger candy and ground coffee beans.
