Distilled on 7 September 2009, this 12-year-old Deanston single malt was independently bottled by Alistair Walker as part of the acclaimed Infrequent Flyers series. After maturing for 12 years, the whisky received a finishing period in a single Sauternes wine hogshead (Cask #6346) before being bottled in December 2021, adding a distinctive layer of richness and fruit complexity.
The influence of the Sauternes cask beautifully complements Deanston's naturally honeyed Highland character. The palate reveals ripe orchard fruits, honey, apricot, and vanilla, alongside gentle oak spice and subtle floral sweetness, with the dessert wine cask contributing luscious stone fruit notes and a smooth, rounded texture. The finish is long, elegant, and delicately sweet.
Bottled from a single cask with an outturn of just 277 bottles, this limited Infrequent Flyers release is an excellent example of Deanston's spirit enhanced by carefully judged cask finishing.
